Chocolate Nut Truffle

In one of my earlier posts on conquering PMS, one of my readers asked about tips to control her sweet cravings while on her monthlies. So if you have a sweet tooth just like Muria, instead of reaching for that king-size Kit Kat bar, here's a divine treat just for you to enjoy without guilt!
Ingredients:
280 g dark chocolate (chopped)
284 ml double cream
50 g unsalted butter
15 shelled pistachio nuts (crushed)

Directions:
1.Put double cream and butter into a saucepan and gently heat until the butter melts and the cream reaches a simmering point.
2.Stir chocolate and cream together until mixture becomes smooth.
3.Chill in refrigerator for 4 hours.
4.Dip an ice cream scoop in hot water and scoop up balls of the mixture.
5.Gently roll truffle in bowl of crushed pistachios until evenly coated ans place on grease proof paper.
6. Store in an airtight container in refrigerator.
