15 Minute Shrimp Stir Fry

Who really has an hour to get dinner on the table after a long day's work and to top it off, being stuck in after work traffic for two hours? Here's a recipe for a healthy home-cooked meal, shrimp stir fry, that you and your family can enjoy within minutes.

Ingredients:
3 tablespoons soy sauce
1 tablespoon rice wine vinegar
2 teaspoons sesame oil
2 teaspoons corn starch
2 teaspoons canola oil
1 1/2 lbs large, cleaned shrimp
1 medium onion, thinly sliced
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
1 cup sliced mushrooms
1 cup sliced water chestnuts
2 cloves minced garlic

Directions:
1. In a small bowl, whisk soy sauce, vinegar, sesame oil and corn starch together.
2. In a large wok, heat 2 teaspoons of canola oil on medium heat.
3. Add shrimp and frequently stir for 3-5 minutes.
4. Add onion, bell peppers, water chestnuts and mushrooms and cook for 3 minutes until tender.
5. Add garlic and constantly stir for 1 minute.
6. Add soy sauce mixture and reduce heat until thickened.
